Crunchy Cravings


We have have our own that food.

You know what I’m talking about: your feel-good food.

Maybe it’s a chocolate bar.

Or pasta.

Or carrot sticks.

Whatever it is, it’s the kind of food you end up craving if you haven’t eaten it in some time, and I cannot remember the last time I made granola.

I want to share with you the most recent adaptation of my favourite¬†granola recipe, one that I’ve spent years developing. So here’s a delicious oil-free, clustery, not-too-sweet granola for the granola lovers out there

I know there are many of you!


Tropical Granola

vegan, gluten-free, soy-free, nut-free (when assuming seeds and coconut are OK), corn-free, refined sugar-free.

3 cups certified GF oats

3/4 cup desiccated unsweetened coconut

2 Tbsp ground flax seeds

1/4 tsp ground ginger

Pinch salt

1/2 cup pineapple juice

1/3 cup coconut nectar

1 Tbsp pure vanilla extract

1/2 cup chopped dates and dried apricots

1) Preheat oven 300 degrees.

2) Combine oats, coconut, flax, ginger and salt in a large mixing bowl. Add wet ingredients and stir to coat everything.

3) Spread mixture onto a parchment-lined baking sheet and bake 50-60 minutes, until golden brown, stirring every 20 minutes or so.

4) Stir the dried fruit into the granola and leave on pan to cool completely. Store in an airtight container.

Yield: about 4 cups granola
