Where are you going? What are you doing? What are your plans 5 years from now?
Few like answering these questions. And people are always asking them—your parents, your friends, your mentors…
I’m always unsure. I never know. How can I possibly know that? I thought. Five years ago from now I’m not the person I thought I’d be today, so what’s the point in planning?
Maybe that’s the problem.
You get so caught up in the web of “could be’s”. You climb one flight of stairs and find yourself at the bottom of another. Running around in circles, you’re so caught up in going somewhere. Dreaming about it, but never acting on those dreams. It stresses you out.
You need to stop. Get a hold of yourself. What do you want for you? Think about it—really think about it. Don’t go halfway to just turn back again. And then take action. No one else can do this for you.
Sometimes you have suck it up and ask yourself the tough questions before you can truly begin.
Apricot and Pumpkin Seed Granola Barsvegan, gluten-free, soy-free, corn-free, nut-free, refined sugar-free
1.5 cups certified gf oats, divided
1 tsp ground cinnamon
Salt, to taste
1/4 cup melted virgin coconut oil, plus extra for the dish
1/4 cup liquid sweetener (I used coconut syrup)
1 cup mixed chopped dried apricots and pumpkin seeds
Lightly oil an 8-inch square dish with coconut oil and set aside.
In your food processor, process 1 cup of the oats into oat flour; transfer to a mixing bowl and add the remaining 1/2 cup of oats. Stir in cinnamon and salt. Set aside.
In a small bowl, stir together melted coconut oil and sweetener; pour over oat mixture. Stir to combine.
Stir in apricot and seeds. Evenly spread out mixture into prepared pan and leave in the fridge to set, about 1 hour. Cut into bars, wrap or serve, and store leftovers (wrapped) in the refrigerator.
Yield: 8 bars
